Easy all-natural homemade disinfectant

I always like to “go green” whenever possible, but I’ve found a lot of the pre-made all-natural cleaners to be pricey so I like to make my own whenever possible. One really cleaver way I’ve found to make my own kitchen cleaner is to save up all of those orange or clementine (my kids will ask for those over candy!) peels in a glass mason jar filled with vinegar. Then you let it sit for a while (really, the longer the better). The orange peels won’t look very pretty, but the vinegar will keep them from molding and you will end up with citrus-infused vinegar. When you are ready to use it, just strain the orange peels and fill up a spray bottle with 1 to 1/2 parts vinegar ratio to 1 part water. For more cleaning power, you can add 10-20 drops of essential oil: lavender, peppermint and lemon all work – and smell – wonderfully in this cleaner. You can use your favorite brand of essential oil, but I have been using the Plant Therapy essential oils for years now and I have found them to be some of the highest quality oils available.

Crave-Worthy Dinner Rolls

Sure, you have your Aunt Gretchen who makes the best chocolate pie, and your grandma’s homemade noodles are something you look forward to all year, but so often the one thing that gets overlooked or forgotten at most holiday get-togethers are the dinner rolls. At best, you end up with some day-old supermarket bakery rolls, at worst, something that’s been in your freezer since last Thanksgiving. But here’s the thing, it doesn’t have to be that way! I started making this recipe 4 years ago, took them to Thanksgiving for the first time 3 years ago, and every year this is one of my most requested recipes. And here’s the best part – you can make these from start to finish in LESS THAN 2 HOURS, closer to 1 hour if you’re in a pinch!

Crave-Worthy Dinner Rolls –

aka The Only Roll Recipe You Ever Need! 🙂

*5 1/2 heaping tsp of Active Dry Yeast (or 4 1/2tsp Instant)
*2/3c granulated sugar
*1c warm milk
*1/2c warm water
–>You CAN “proof” your yeast for 5-10mins here, or if you trust that it’s fresh, you can keep moving along.
*1tsp kosher salt
*1/4c softened butter (I usually add an extra Tbsp for good measure, so 5Tbsp total)
*5-5 1/2c flour (I usually use a mix of King Arthur’s Hi-Gluten and All-Purpose Flour, but these are also fantastic with just Hi-Gluten or Bread Flour, a mix of Bread Flour + AP, or even AP-only if that’s what you have on hand. These are YOUR rolls, have fun with them! :))

Add everything but the flour to your bowl. Gradually mix in flour (I usually just add in about 4 cups and then slowly add the rest as it comes together) with dough hook on stand mixer or knead by hand. The dough should be soft and have some elasticity, but not be too sticky. Be careful not to add too much flour, for me about 5 1/8-5 1/4c is perfect.

Grease bowl, cover and let rise in a warm place for 20-30mins, if you are using a mixing bowl, it should rise to at least the top of it. Then dump dough onto a clean work surface (silpats are perfect for this), and divide the dough into 15 or 30 equal pieces. I find it’s easier to divide the dough in 4ths, then divide those into 4ths again so you end up with 16 pieces and just add the extra to the smaller rolls (there will always be the runts that need a little more dough! :)). If you are making these for a larger crowd, definitely go with making 30 instead. They will rise considerably so you will still get a nice-sized rolls. The larger rolls that you get if you only make 15 are perfect for sandwiches (leftover ham or turkey is amazing with these!), and I’ve even used them as hamburger buns! This time I made one batch of 15 and one of 30 so there are pictures with both.

To shape the rolls, pull the sides down and pinch them together at the bottom. Try not to over-handle them at this point, and then place them pinched-side down side-by-side in a well-buttered 9x13in baking dish.

Cover and let rise again until at least doubled in size (15-20mins). Bake in preheated oven at 375° until the tops are golden brown, about 16-18 minutes. Run butter over the tops while still hot. Sprinkle with coarse sea salt and enjoy! 🙂

Notes: If you want to double this recipe, I would recommend just making the dough twice and then letting the first batch rise for the extra 10 minutes it takes to whip up the second. I have a 5qt Professional Kitchenaid stand mixer and the single recipe is enough to give it a good workout!

How to save money on your holiday shopping

1. Don’t fall for manipulative advertising.

I think that impulsive buying is just about the easiest way to spend money during the holidays (aside from your 1 year old’s knack for hitting that “1-click buy” button on Amazon!). Yes, that giant “ONE DAY SALE” sign is tempting, but how “on sale” is it, really? And did you know that MOST of the larger companies (especially department stores and big brands), have a “one day sale” nearly every day of the week? Beware of advertising created to give you a sense of urgency, most of the time they are just trying to see how fast they can get that cash out of your wallet!

2. Always go in armed with extra discounts.

There are so many “extra” ways to save money! Always check for store coupons (either printable or in-ad), before you leave the house. If you are doing online shopping, ALWAYS check for cashback bonuses. VISA and AMEX regularly have their own offers available, or you can save even more by going through Ebates or Swagbucks. If you don’t already have an Ebates account, it’s FREE to join and you can sign up with my referral link to get a $10 CASH bonus.

3. Know your bottom line (or dollar).

Spend some time researching prices ahead of time so you have an idea of how much you want – or are willing – to spend. Many blogs and websites archive deals from years past so you can search for a particular item to see how low the price has gone. I usually go in with a small price range in mind and will buy the product once it falls in that range. I do think it’s important to give yourself some range though, otherwise you might miss out on a truly GOOD deal just because it’s 7 cents higher than it was last year.

4. Don’t spend all of your money (or your time) on “Black Friday.”

Sure, there are good deals to be had, but there are often even better deals coming as we get closer to Christmas. Driving around in circles and standing in line for hours only wastes gas and might just give you a few more gray hairs. Instead, go out and do something FUN with your family and enjoy those turkey leftovers! Besides, there’s always Cyber Monday…

5. And on that note, DO spend all of your money (or at least a chunk of it) on “Small Business Saturday.”

I think that it is so important to support the “little guys” on every day of the year, but if they want to make a big deal of it the first Saturday after Thanksgiving, why not? AMEX is no longer offering a statement credit (boo!), but you can still find some great deals at the local mom and pop stores (my favorite are the consignment!), and it’s worth it for that warm, fuzzy feeling you get knowing that your money was well-spent.

Super Peanut Butter Cream Pie

Yesterday was my husband’s birthday, and even though he decided to buy his own “big” birthday presents this year, I couldn’t resist putting together a few of his favorite things to spoil him a little – including making him a delicious dessert!

pbpie1A new leather camera/laptop bag, Hot Buffalo Pretzels, Good Beer, Velvet’s Peanut Butter Buckeye Ice Cream (that I forgot to add in for the picture), and Peanut Butter Pie – what more could a guy ask for?

I was originally inspired to make a peanut butter cream cheese pie after watching a video on Facebook. I didn’t love the recipe though, so I decided to make my own version, which includes a little less cream cheese and a lot more peanut butter! If you LOVE peanut butter, this is the stuff dreams are made of! 🙂 It’s like a peanut butter explosion dancing on your taste buds!

This recipe is super simple, and perfect for the busy SuperMom who wants to make something tasty without spending all day in the kitchen! It’s a perfect dessert to take to Thanksgiving or really, any (peanut-friendly) family gathering because it is quick to throw together but the results are very impressive!

pbpie2
You can stop right here … but why would you want to?

pbpie3Chopped Reese’s cups make the perfect “crust!”

pbpie5
Yep. Things just got real … real scrumptious!

“Super” Peanut Butter Cream Pie

*One 15oz jar (approx. 2 1/3c) of Natural Creamy Peanut Butter

*16oz Cream Cheese (I used 1/3 fat)

*One 8oz tub of Whipped Topping (Cool Whip)

*2 cups of Powdered Sugar

*1tsp Pure Vanilla Extract

*Prepared Chocolate (or Graham) Crust

*Reese’s Cups and/or Reese’s Pieces to decorate

Mix together peanut butter, cream cheese and whipped topping in stand mixer or by hand. Incorporate vanilla, then slowly add in powdered sugar. Fill prepared Chocolate Crust, and decorate with candies. Chill in refrigerator for at least 4-6 hours before serving (or freeze for 2-3 hours, just be sure to keep an eye on it so it doesn’t freeze solid!).

NOTES: You certainly CAN use “regular” peanut butter (with sugar added), just use less powdered sugar, I would start with 1 cup and go from there.

Who is SuperMom?

When I was little, I always thought of my mom as SuperMom.

She worked hard, she loved us harder, and she was one of the most honest people I knew.

Now, with 3 little ones of my own, 2 of which are old enough to call me “SuperMom,” I realize how heavy that title – or should I say, cape? – can weigh. Some days I really feel like I have everything together, like maybe this parenting thing isn’t so bad after all, but other days … “super” anything is the last way I would describe my day or myself for that matter.

I wanted to start this blog in hopes of giving other moms a “leg up” so maybe they could unleash their own inner superpowers and quell some of the chaos going on in their own lives. I certainly do not have it all figured out, but I have been at this parenting thing for 8 1/2 years now so I hope that my experiences can give confidence to someone else just starting out with that squishy -but screaming – newborn, or help the mom whose kid just bubble-gummed their hair find a quick and easy solution for how to undo their toddler’s new do, or even provide some respite for the experienced mom who just needs someone else to tell her what the h*ll to make for dinner! 🙂

Every mom is a SuperMom. Yes, even you. And just maybe, even me.
